This is one of my favorite sandwiches. It's so fresh and simple to make. Just follow these simple steps:
Servings: 2
Here's what you need:
-1 Cooked chicken breast sliced into thin pieces
-1 Apple chopped into bite-sized pieces
-1/4 c. Mayonnaise
-1-2 tsp vinegar
-Salt/Pepper
- A couple handfuls of fresh spinach
-2 Croissants
Here's what you do:
-In a medium bowl, combine chicken, apple pieces, mayo, and vinegar. Season to taste with salt and pepper.
-Place a handful of spinach and half of the chicken mixture inside a croissant. Repeat with second sandwich.
Just thinking about this meal makes me hungry. You could add walnuts, change the apples to grapes, or add a little mustard to your sandwich to change it up.
