Crepes with Homemade Strawberry Syrup

Strawberry and Mascarpone Crepes with Strawberry Syrup

I love crepes! This is definitely one of my favorite dishes to make on a lazy Saturday morning. I had these a couple months ago with a friend, and now I'm thinking it's about time to make them again! Enjoy!

Crepes

What you need:

1 cup all-purpose flour

2 eggs

1/2 cup milk

1/2 cup water

1/4 teaspoon salt

2 tablespoons butter, melted

What you do:

Grab a big mixing bowl, and whisk the flour and eggs

Add the milk and water gradually while stirring

Pour in the salt and butter, and mix until it’s nice and smooth

Lightly oil a frying pan on medium to medium-high heat

Pour ¼ cup of the batter onto the pan. Swirl the pan around to evenly spread the batter.

After about a minute or two, flip and cook the other side.

Repeat until all the batter is gone!

Strawberry Syrup!

What you need:

1 cup sugar

1 cup water

1 1/2 cups mashed unsweetened strawberries

**Make sure you save some whole strawberries to slice for the top!

Here’s what you do:

Boil the sugar and water in a saucepan.

Gradually add your mashed strawberries, and let that boil.

Simmer for about 10 minutes (Give it a stir every once and a while)

When it’s all done, pour your syrup over the crepes. Add a little powdered sugar, extra sliced strawberries, and whipped cream! It’s always better this way.
